Dashi is a soup base made with Bonito (fish) and Kelp. In addition to making Miso soup, it will also be added to various dishes.
The authentic way is to boil Dried Bonito Flakes (Katsuobushi) and Kelp (Kombu) in hot water. It’s not difficult to do, but these two ingredients are too expensive to buy in the UK.
A cheap alternative is Dashi Stock. Just add it to the hot water. Of course, the nutritional value will be lower.
